Tvorog (Farmer’s Cheese)

Ingredients:
– 1 gal Whole Milk
– 1/2 gal Buttermilk
– Water

1. Pour a half inch of water into a large pot
2. Add milk and buttermilk
3. Bring to a boil
4. Remove from heat and allow to sit at room temperature overnight
5. Using a fine strainer, separate the curds and whey

Babushkas Notes
– Straining the curds must be done very gently, otherwise the curds will break up and the texture of the tvorog will be wrong.
– The strained off whey can be be stored for later use in recipes requiring milk.
