Limonik (Lemon Swiss Roll)

Ingredients

  • 1 egg
  • 1/2 tsp baking soda
  • 1 can sweetened condensed milk
  • 1 cup flour
  • 1 large lemon
  • 3/4 cups sugar

Instructions

Sponge

  1. Combine egg, baking soda, condensed milk, and flour
  2. Prepare a baking sheet with parchment paper that has been buttered and sprinkle with flour
  3. Bake at 350 for 15 minutes or until the bottom is golden brown

Filling

  1. Grate the lemon on a large grater
  2. Add sugar
  3. Working quickly, spread the filling over the baked sponge and roll it longways

  • Any sour fruit jam can be used as a filling
